I heard that "Nandenkanden", which is also called "legendary ramen shop", has appeared in Shibuya, Tokyo, so I went to eat it. It is a truly royal tonkotsu ramen with thin and firm noodles in a rich and mellow cloudy soup.
Chitose Kaikan "Shibuya Meat Yokocho"
Nandenkanden is located at "Shibuya Meat Yokocho" on the 2nd floor of "Chitose Kaikan" in the center of Shibuya. It is a floor where many restaurants are gathered. A small, long and narrow shop just up the stairs. It's open from 17:00, but the seats were quite full right after the store opened.
As it is a famous restaurant that is featured on TV programs, there were some scenes where customers who seemed to be fans had a short conversation with the restaurant staff, but most of them concentrated on eating the ramen in front of them. I am.
Royal pork bone ramen
There are various toppings on the menu, but I ordered the basic "ramen". The selling price is 820 yen (tax included). The hardness of the noodles can be specified at the time of ordering.
To see the condiments on the table while waiting. Sesame seeds, garlic, green onions, pickled ginger, mustard mustard. You can sprinkle as much as you like, and if you think the taste is light, you can add a seasoning called "umami soup".
Ramen will be delivered after a while. A white bubbling soup with thin noodles, a piece of wood ear, nori seaweed, green onions, and char siu. Very standard pork bone ramen.
When I scoop up the soup with a lotus and drink it, it is creamy and thick, and the umami of the fat is also good. The saltiness was moderate and I felt that there was no need to add seasonings. I'll add some condiments to the table right away.
It looks gorgeous when you put red pickled ginger on it. First of all, I will bite the char siu. It is soft and crumbles on the tongue, and has a strong pork flavor, but does not have a strong scent. You can enjoy it more by putting it in your mouth with the soup.
I chose "normal" for the hardness of the noodles, but it is still firm. When chewed with a wood ear, you can feel the difference in the texture of each tooth. Very well entwined in the soup.
It's okay to add a lot of condiments, but the one that works best is red pickled ginger. The moderate acidity complements the mellow pork bone soup.
It's a satisfying volume with a cup, but you can also order an additional "replacement ball" of noodles for 160 yen, so if you are confident in your stomach, please do.
