Hakata Daruma is a long-established ramen restaurant established in 1963 in Hakata, Fukuoka Prefecture. The ramen, created over more than half a century by two generations of family members, the first being Noboru Kawahara and the second Hideto Kawahara, is characterized by its rich and thick tonkotsu (pork bone) soup and ultra-thin noodles. It is famous as a popular restaurant that attracts customers from all over Japan as well as from its hometown Hakata for its flavor.

The "Hakata Tonkotsu Ramen" under the supervision of Hakata Daruma is a reproduction of the same flavor that can be enjoyed at Kappa Sushi. The soup combines the rich, thick pork bone flavor with the sharpness of soy sauce and the taste of rich fat. The noodles were developed for this product after more than half a year of repeated trial runs to create a thin noodle that would blend well with the soup.
