The noodles are made with tapioca flour and cooled in cold water to give them a thick, sticky texture, and are said to be smooth and easy to enjoy. The hot dipping sauce is based on Ippudo's mellow pork bone broth and contains bonito, mackerel, sardine, and other fishmeal, giving it a rich, seafood flavor.
