Learn how to remove the scum from bamboo shoots using the water from boiling rice instead of rice bran. After boiling, you can soak them in water and refrigerate or freeze them!

So, here is a more convenient way to remove the bamboo shoots' acridity. Use rice water!

It is said that red pepper helps to reduce the bitterness of bamboo shoots, but you can also remove their acridity without it.

: Wash the bamboo shoots well and remove the soil thoroughly.

Remove stubborn dirt stains with a scrubber.


Cut off the hard part of the root (if not attached, it is OK) and 5-6 cm of the tip of the ear diagonally.


Make a vertical slit about 2 cm deep. This will make it easier to cook and remove the scum, and also make it easier to peel the skin after boiling.


Put bamboo shoots, red pepper and enough rice water to cover the bamboo shoots in a pot and heat. Heat over high heat at first, then lower the heat when it comes to a boil. Remove any scum.


Cover with a drop-lid (aluminum foil is OK) to prevent bamboo shoots from floating, and boil for about 1 hour after the water comes to a boil.


When the bamboo shoots are soft enough to be easily pierced with a bamboo skewer, turn off the heat and let sit until the water cools. When cool, remove the bamboo shoots, peel them, and voila!


The skin can be peeled off easily.

Unused bamboo shoots can be

refrigerated or frozen.

Put them in a storage container, fill it with water to the brim, cover it with a lid, and store it in the refrigerator. Change the water daily and eat them within a week.

You can also freeze bamboo shoots in a tightly closed zipper bag with water and small pieces of bamboo shoots. This way, they can be stored for about a month. In any case, we recommend eating them while they are as fresh as possible!
