Tantanmen specialty store "Tantanmen Gomaru" opened in Ginza, Tokyo on February 18th. Gomaru's Dandan noodle menu can be selected from 4 levels of spiciness (no spiciness, modest spiciness, regular, increased spiciness). This time I chose a standard regular.
The toppings are pork, green onions, bok choy, and Chinese pepper fried with seasonings. The generous amount of chili oil uses 2 types of oil (soybean oil and rapeseed oil) and 3 types of spices (cinnamon, star anise, and Japanese pepper) to create a rich flavor.

The rich flavor and richness of sesame is condensed in the chicken base, and it is so delicious that you might inadvertently leave the noodles behind and drink them up.
The noodles are crispy and have a chewy and soft texture. It is a little thick and goes well with thick soup.
