Tonkotsu Tsukemen Seafood Tonkotsu Tsukemen is topped with chashu pork, nori, and fishmeal. The rich flavor of the fish meal, which is a combination of sardine dried sardines and mackerel bones, accentuates the taste. The dipping sauce is a combination of soup stock made from dried sardines, mackerel bones, and bonito flakes, and pork bone broth, topped with yuzu (a type of citrus fruit).
