Wash sweet potato and cut into bite-sized chunks, drain in water and drain. Cut onion into 1 cm pieces. Cut onion into 1cm wedges. Cut chicken into bite-sized pieces and sprinkle with salt.Heat olive oil in a pan and brown the chicken, starting from the skin side. When the chicken is lightly browned, add the sweet potatoes and sauté until combined.
When the sweet potatoes are coated with oil, add water, sake, onion and cover with a lid.
Simmer for about 7 minutes, and when the sweet potatoes are tender, remove the lid and add soy sauce. Simmer while letting the water evaporate, and add butter to finish.
