Umami seaweed soup soba is a ramen made by treating the glue as "dashi no moto". Made by Mr. Kimura, who entered from Shirakami, a ramen shop in Gifu prefecture.

The soup is made from Rausu kelp, anchovy, and chicken sardines, and is finished with the flavor of seaweed before serving. The noodles are medium-thick noodles made from 100% Hokkaido wheat, our own brand powder "Kita no Mugi Flavor".

The toppings are purse, "Nori Senbei", and "Konbu Egg" soaked with the umami of kelp. It is said that the purse contains minced chicken, bamboo shoots, and shiitake mushrooms fried with bean paste, and Okumino Kouji chicken abra and its oil added. By breaking this purse, the soup centered on seafood is mixed with the powerful taste of animals.

The ramen general election started in 2012 as an in-house contest of Chikaranomoto, which operates Hakata Ippudo. Out of all 176 mails, umami seaweed soup soba ranked first. In addition, the 2nd place "Golden Sea Bream Ramen" (Okayama Prefecture) and the 3rd place "Orange Fragrant Sea Bream Salt Ramen-Mediterranean Wind-" (Aichi Prefecture) were selected.
