Ippudo "Chilled Karaka Noodles

Ippudo will introduce "Chilled Karaka Noodle". This plant-based chilled, deliciously spicy ramen is a colorful variation of the classic "karaka-men" without animal ingredients. 20 bowls per day will be available at 9 Ippudo stores in Japan from July 20 to late August. The price is 1,200 yen (tax included).

A cold soup based on kelp dashi and soy milk is spiced up with raayu and spicy sauce. The noodles are made from Japanese wheat and are flat, medium-thick noodles with a smooth texture. Ippudo Lumine Est Shinjuku uses whole wheat noodles, which are different from those used at the other eight Ippudo restaurants.

Marinated red cabbage and fried onions are added to accentuate the flavor and texture, and mango, pink grapefruit, pineapple, and fragrant mint are added for a tropical touch. Veggie meat miso, a plant-based meat substitute, is dissolved in the soup for a spicy change of flavor. It is also recommended to add a squeeze of lemon to the soup for a refreshing "taste change.

The noodles are made in the same kitchen as those using animal ingredients. The noodles are cooked in the same pot as the noodles with eggs, even though the noodles do not contain eggs. The noodles are made with green onions, onions, and garlic. In addition, the start date of sales differs in some stores. The hardness of the noodles cannot be selected, but are prepared as "normal noodles". The coupons are not applicable for "birthday coupons," "first-time coupons," and "premium coupons" of the official Ippudo application, nor for "shareholder discount coupons.
