The ramen "Veggie Soba", which uses vegetables for all ingredients, is famous, but this time I would like to introduce a hidden masterpiece that is not yet known. The limited menu "Mushroom Veggie Plain Hot Water Soba" (920 yen) offered at "Soranoiro Tonkotsu & Mushrooms" in Kyobashi Edglan! This is the No. 1 ramen you should eat now (according to my research)!
◆ Super rich! Soy milk and mushroom soup
The decisive factor for the deliciousness is the rich soup . Homemade mushroom paste is mixed with veggie broth (vegetable soup stock) and finished with soy milk. A special "salt sauce" that combines bonito dashi stock is also added.The blackish one that floats completely is "mushroom oil". It is said that the dried mushrooms are rehydrated with water and cooked with oil to bring out the umami.
The mouthfeel is very rich with Trottro! However, it is light and smooth, so you can drink it endlessly. The mellowness and richness of soy milk, and the umami and mellow scent of mushrooms that are insisted on from the first bite ...!
The noodles are wide, flat noodles with a chewy texture. It is slightly brownish because it is kneaded with shiitake powder and olive oil.
When you entwin a lot of rich soup and bring it to your mouth, the fragrance will be even richer with the "W mushroom" of shiitake mushrooms and mushrooms!
The toppings are chicken breast roasted pork, crispy sliced cheese, brown mushrooms, midi tomatoes, paprika, zucchini, and arugula.

In addition to this, there are two ramen that can only be eaten at the Kyobashi Edglan store.One is "pork bone buckwheat". Mr. Miyazaki, the representative of Soranoiro, who was training as the "second disciple" at that Hakata Ippudo, is a tonkotsu ramen that has been fully unsealed (!). This dish is light and has no habit, and is recommended not only for people who like tonkotsu but also for people who are not very good at tonkotsu.
There are flavored balls and char siu, but if you want to eat it, be sure to try the "all-in-one" and " special pork bone buckwheat " (1,100 yen)! The soup is boiled with pork genkotsu and spine, and is finished by adding a special sauce that combines kelp, shiitake mushroom stock, and soy sauce.
The noodles are slightly thin straight noodles. It is crisp and crisp, and has a moderate elasticity.
The soup has a rich tonkotsu flavor and a rich umami flavor, but it doesn't feel sticky or heavy! Rather, the Japanese-style soup stock works, and the mouth is refreshing enough to drink very much.
We are particular about char siu. Only female pigs from the brand pig "Seto no Mochi Pork" from Fukuyama, Hiroshima Prefecture, which are said to have been bred with as little stress as possible, are used.
The more you chew, the more it melts, and it has a strong fat sweetness. With this one cup, you can enjoy two types of char siu, a moist sliced thigh meat and a thick rib meat that crumbles.
◆ Ethnic spice pork bone buckwheat
Also, "Spice Tonkotsu Soba", which is recommended for spicy food lovers, is also a limited ramen shop. The base pork bone buckwheat soup is blended with several spices such as Japanese pepper and cumin in a unique formulation.There are four types of spice tonkotsu buckwheat, such as those with flavored balls and those topped with coriander, but the recommended one is the " special spice tonkotsu buckwheat " (1,130 yen).
It is topped with char siu, coriander (can be changed to green onions), onion slices, bean sprouts, and all-purpose green onions made from Seto mochi pork.
On top of the bean sprouts is a special spicy miso. In addition, finely chopped Korean pepper is sprinkled on the char siu.
When you squeeze the noodles, the scent of spices will flow into your mouth along with the air. Ethnic flavor like curry is addictive! The spiciness of Japanese pepper pierces the tongue comfortably, and the aftertaste is refreshing and sharp. This refreshing feeling seems to be due to "cardamom".

At dinner time, it is good to enjoy the snack menu while drinking alcohol. Drinks include beer, highball, and shochu.
