"Tsukiji Ebi Kin" is a 5-minute walk from Tsukiji Market Station, straight through the Tsukiji Outer Market. Right in front of the Namiyoke Inari Shrine across the road. The red sign that makes you think of shrimp is a landmark.
If you buy a meal ticket at the ticket vending machine outside the entrance, go inside the store. The audience seats are only the counter seats on the 1st floor, and the 2nd floor is a noodle factory. Expectations are even higher that you can eat the shop's homemade noodles.
The restaurant's main menu, "Ebino Soba" (780 yen), is homemade noodles made by kneading dried sweet shrimp shells into fine powder, and a soup made by boiling the flavor of sweet shrimp. Combined. In addition to boiled eggs, green onions and char siu, sakura shrimp is also topped. It's more like the old-fashioned "Chinese noodles" than "ramen".
Both the noodles and the soup are golden. When you take a sip of the sparkling soup, the scent of rocky shore, the fragrance of shrimp shells, and the richness and umami of "miso" spread in your mouth at once.
Homemade noodles are straight thin noodles that are sucked into your mouth. The flavor is not as strong as the soup, but the taste of sweet ebino is also condensed here. When you eat it with the finest soup, it has a luxurious taste. It's an irresistible cup for shrimp fans.
By the way, what is used for shrimp soba noodles is the head and shell of sweet shrimp that are no longer needed at the Tsukiji market. It's a waste to have more flavor!
