Material ( For 2 persons )
pumpkin 150g (5.29oz)
tube-shaped fish-paste cake 1 or 2
soy sauce 1 tablespoon
mirin 1 tablespoon
sake 1 tablespoon
sugar 2 teaspoons
oil proper quantity
Sesame seeds, shichimi pepper (optional) proper quantity

Kabocha and Chikuwa Kinpira Recipe

Ingredients



Kabocha 150g (5.29oz)
Chikuwa 1-2 pieces
1 tablespoon soy sauce
1 tablespoon mirin
1 tablespoon sake
2 teaspoons sugar
Oil to taste
Sesame seeds, shichimi pepper (optional) to taste

Directions

Wash kabocha, remove seeds and wadding, place on a baking dish and cover with plastic wrap.


Heat in a microwave oven (500W) for 3 minutes. When softened, take out the pumpkin and cut into long, thin sticks.


Cut the chikuwa into bite-size pieces.


Heat oil in a frying pan and fry the kabocha and chikuwa.


When browned, add soy sauce, mirin, sake and sugar.



When all the ingredients are coated with the sauce and the sauce is shiny, serve in a bowl. Sprinkle with sesame seeds and shichimi (seven spice) to taste!
