Remove seeds and wadding from well washed pumpkin. Wrap in plastic wrap and microwave (600W) for 1 minute, then cut into 1.5 cm cubes.Place in a heatproof container, cover with plastic wrap, and microwave for 2 to 3 minutes until pumpkin is tender. Once cooled, freeze.
Place pumpkin and other ingredients in a blender and stir to combine! You can sprinkle cinnamon or increase the amount of honey if you like.
