Festival" Sushiro will hold its "Once-a-Year Betsu Tuna Festival" for a limited time starting July 3, where customers can enjoy natural tuna, including Pacific bluefin tuna.

Once

a year, Sushiro, which is particular about tuna, has teamed up with Yasu Suisan, a professional group of tuna connoisseurs, to offer carefully selected tuna in hopes that customers will enjoy the delicious tuna. Yasu Suisan is a long-established tuna wholesaler that is also a wholesaler to high-end sushi restaurants and is no stranger to the tuna industry.

The most notable item on the menu is the "Natural Pacific Bluefin Tuna and Natural Indian Tuna Comparison. The "king of tunas" is the natural Pacific bluefin tuna, which is carefully selected for its rich flavor and delicious fatty taste. The Indian tunas, which are as good as the bigfin tunas, are carefully selected for their bright color, elegant flavor, and sweet fat. You can enjoy a comparison of the tuna and the Indian tuna, including the large tuna, medium tuna, and the lean tuna.

In addition, as a token of appreciation for Sushiro's 40th anniversary, Yasu Suisan's albacore tuna will be sliced into large pieces and offered at all Sushiro stores for 100 yen, tax included. Other items on the menu include "Selected Natural Bigeye Tuna," made by carefully selecting only large-sized tuna weighing 40 kg or more, and "Selected Natural Bigeye Tuna Negitoro Temaki," which features negitoro of natural bigeye tuna with crispy laver from the Ariake Sea.

During the fair, all sushi items will be served with "akashari," which brings out the flavor of the ingredients. Aka-sushi is made with red vinegar made from sake lees that has been aged for a long time, and sugar and Hokkaido's sugar made from sugar beet (about 20% of the total sugar used) are added to create a mellow taste. The acidity and sweetness are in perfect harmony and enhance the flavor of the ingredients.
