The dough is made from Miyagi Prefecture's Miyagikogane rice, which is characterized by its firm yet stretchy texture, and its sweetness is kept to a minimum, allowing the original sweetness and flavor of the rice to be felt. The bean paste is made from large, flavorful Dainagon azuki beans from Hokkaido, and is cooked to a soft red bean paste.
