"Mi tsukushi soup oyster simmered in sleet" Soup Stock Tokyo

This soup is inspired by the best-selling era novel series "Mi Otsukushi Cookbook", which has a cumulative circulation of over 4 million copies by author Kaoru Takada. A collaboration soup commemorating the release of the first movie version of the movie "Mi Otsukushi Cookbook".

A sleet-style cup with plenty of ingredients, which is a combination of grated daikon radish with Chinese cabbage and maitake mushrooms added to simmered oysters with plenty of umami. The soft sweetness of Saikyo miso, the spicy taste of yuzu pepper using fragrant yellow yuzu, and the crisp texture of mizuna enhance the deliciousness of oysters.

The protagonist is "oysters," which are impressive even during the production. Ushioni is a simmered oyster that is boiled only with the tide of the oyster without adding seasonings or water. This oyster, which is full of umami, is made into sleet with grated daikon radish with Saikyo miso as a secret ingredient, and the spicy taste of yuzu pepper using fragrant yellow yuzu is added. This soup, which uses plenty of radish, imitates the Edo period "Rikyu Aemono radish" with a little cinnamon. By adding cinnamon, it is said that radish can be erased. I am making the best use of the wisdom of the Edo period.
