Bitter gourd, which is in season in summer. Bitter gourd champuru is a staple, but there are still many dishes to enjoy bitter gourd! Here is one recipe for "Goya Curry".
◆ Materials (for 4 people)
1/2 bitter gourd mini tomato 10 pieces Pork cut-off meat 200g (7.05oz)1 onion 1 tablespoon salad oil
Your favorite curry roux 60g (2.12oz)
600 ml of water
1 teaspoon salt
◆ How to make
1. Cut bitter gourd in half lengthwise, remove seeds and cotton with a spoon, and slice into thin slices. Sprinkle salt and squeeze well, leave for about 10 minutes and squeeze out the water.2. Heat the salad oil in a frying pan and fry the pork.
3. When the pork is half cooked, add sliced onions and bitter melon and fry briefly.
4. Add water and calyxed cherry tomatoes and simmer for about 5 minutes.
5. Turn off the heat, add curry roux, and heat it again to thicken it.
◆ What is the taste?
Even if you use the usual curry roux, it will have a summer taste just because it contains bitter gourd! You can feel the refreshing bitterness comfortably. The sweet and sour taste of cherry tomatoes is a good accent. Curry with the flavor of vegetables and meat seems to be delicious even for children who are not good at bitter gourd.
