The soup is cooked slowly with only deer bones and water so that it does not become cloudy for a long time, and finished in a clear color. It has the umami and sweetness of cooking flavored vegetables together, but it is only shishibone. The aftertaste has a soft, deer-specific scent.

The sauce is made by shining light on the seawater of Noto and slowly crystallizing it as salt at a low temperature of less than 40 degrees Celsius. It is said that they do not use the most salty salt and the most bitter salt, but mix the second to fourth salt.

The noodles are thin noodles made from Hokkaido wheat "Haruyo Koi" and are characterized by the fragrance of wheat and the smooth and chewy texture.
