Dorayaki with two textures, "fluffy" and "mochimochi", will be released by MONTEUR on February 1st. "Fluffy Dorayaki / Uji Matcha" and "Mochimochi Dorayaki / Uji Matcha" are both for a limited time.

Dorayaki with Uji matcha cream sandwiched between two different types of dough, "fluffy" and "mochimochi". The cream is tailored to the best balance for each dough.

Fluffy dorayaki is a fluffy dough made by adding yam and mirin. It is chewy and spreads the flavor and aroma of the dough. The cream consists of two layers: a mellow matcha cream that combines Uji matcha paste with whipped cream and white bean paste, and a rich matcha bean paste that combines Uji matcha paste with homemade custard and white bean paste.

On the other hand, Mochimochi Dorayaki is a dough that has elasticity and softness, and has a slightly sweet and elegant taste. The cream is a matcha cream that is a blend of Uji matcha paste, whipped cream and white bean paste. It has a mild taste by adding plenty of white bean paste to match the chewy dough.
