shiitake mushroom (Lentinula edodes) 8 pieces
ginger (Zingiber officinale) spoonful
Men-tsuyu (3 times concentrated) 100ml (3.38us fl oz)
water (esp. cool, fresh water, e.g. drinking water) 200ml (6.76us fl oz)
mirin 1 tablespoon
sesame oil 2 teaspoons

Chicken Wings and Chinese Cabbage in Mentsuyu

Ingredients (for 2 persons)

6 chicken wings
1/8th Chinese cabbage
8 shiitake mushrooms
1 sprig of ginger
100 ml men-tsuyu (3 times concentrated)
200ml (6.76us fl oz) water
1 tbsp mirin (sweet cooking rice wine)
2 teaspoons sesame oil

Cut Chinese cabbage into 10cm pieces, cut shiitake in half lengthwise. Cut ginger into thin slices. Cut the chicken wing along the bone.


Put Chinese cabbage, shiitake mushrooms, ginger, and chicken wing into a heavy pot with a lid, and heat over medium heat.

At first, you may have a lot of bread, but as the Chinese cabbage softens, you will have more room.

When it starts to boil, reduce the heat to low and cover with a lid. Simmer for about 30 minutes, turning it over halfway through.
