Chicken and Root Vegetable Stew with Sweet and Spicy Sauce

Ingredients (for 2 persons)

1 chicken thigh
200g (7.05oz) sweet potato
150g (5.29oz) lotus root
1/2 tbsp olive oil
1 hawk's claw
5 tbsp sweet sake
1.5 tbsp soy sauce

Sweet and Spicy Chicken and Root Vegetable Stew Directions

Cut sweet potato and lotus root into bite-sized pieces with skin on. Cut chicken into bite-sized pieces. Cut falcon's claw into small pieces.


In a pan, heat the olive oil and falafel over medium heat, place the chicken skin side down and cook for about 2 minutes.


When the chicken is browned, add the sweet potatoes and lotus root and saute until the oil is absorbed.


Add sweet sake and soy sauce, mix briefly, cover and simmer over medium-low heat for about 5 minutes.


Remove the lid and simmer over high heat for about 1 minute to finish.
