1 umeboshi, 1/2 burdock, 1 teaspoon of granule dashi stock
Water 300cc
1 teaspoon soy sauce
1 tablespoon liquor
Appropriate amount of sesame, dried bonito, etc. (if you like)
How to make
Peel the burdock root and chop it for easy eating.
Umeboshi is seeded and chopped.
Put water and granule soup stock in a pan and heat to make soup stock.
Add burdock root and simmer over medium low heat until the burdock root is tender.
Add soy sauce, sake, and chopped umeboshi, cover with a lid, and simmer. Aluminum foil can be used as a substitute for the drop lid.
After simmering until the juice is gone, serve it in a bowl and sprinkle with sesame and dried bonito flakes as you like.
