The Setouchi lemon peel was selected by Seijo Ishii's fruit and vegetable buyers in 2022. They are characterized by their moderate acidity and sweetness, and are suitable for peel as they are free of fungicide, preservatives, and wax, and can be eaten down to the peel. This time, the peel is mixed into the cream.

In the prototype stage, the cream was too soft, and when inserted into the cookie, the cream would stick out, making it difficult to achieve a firm texture. You can also enjoy the moderate sweetness and richness of the chocolate.


The cookies are individually coated with an egg to give them a glossy appearance. Each cookie is hand-applied with cream to give it a handmade feel. The crisp, flavorful dough, made with about 23% butter, is a perfect match for the cream. The refreshing aroma, tartness, and bittersweet flavor of lemon are combined with the cookie.
