"CHOYA ICE NOUVEAU Ice-ripened Plum Wine 2020" is a plum wine made by fermenting ripe Nanko plums harvested in June this year into fruit juice while maintaining their freshness by the "ice-ripening method". It features a fruity scent like peach and a fresh sweet and sour taste. Choya's plum wine has been aged for at least about a year, so this is the only sake that will give you the taste of plum in 2020.

The plums used are "phantom plums" that are delicate, difficult to manage, and are not distributed in the market. The ripe Nanko plums from Kishu, which were specially produced at a cooperative farm in Wakayama prefecture, fall off the branches naturally when they are ripe to the limit on the tree. 100% of the ripe Nanko plums, which have the highest maturity, are used.
