Bistro Marx "Brioche"
"Special brioche" landed for the first time in Japan

In September 2016, Thierry Marx, who is said to be "one of the most famous chefs" in France, opened the world's first store (!) Grand Bistro & Premium Terrace Bar " BISTRO MARX " in Ginza, Tokyo. Open Prior to this, a pop-up store appeared on August 20th and 21st at the United Nations University Square in Aoyama.

The limited quantity sold was the signboard menu "Brioche (plain)" (1,000 yen including tax). There was a long line at the shop, and in the morning of the second day, it was so successful that 50 pieces were sold out in 15 minutes.

I also got the editorial department to eat brioche of such a topic! Let's check the ability to see what it tastes like.

◆ Crispy outside, fluffy inside

Marx's brioche is made by layering dough and butter, just like a croissant. By laying this dough firmly and embracing the air, the baked brioche will have a fluffy and airy texture.

The inside is fluffy airy

The fabric is fluffy and elastic, and when you cut it, you will surely find plenty of air in the room! When I try to eat it, the outside is firm and chewy, and the inside is moist.

It's fluffy

Lightly warm it with a toaster to restore the freshness and make the outside crispy and crispy like a croissant. Furthermore, the moist feeling of oil is revived inside, and it melts in the mouth . The contrast between the outside and the inside is amazing.

◆ The richness of butter and the sweetness of eggs

Marx's brioche says, "We are particular about the materials." Wheat from Hokkaido, eggs with strong richness and sweetness, fermented butter from France, raw yeast, etc. are used.

Beautiful whirlpool when viewed from above

The surface is slightly sprinkled with powdered sugar, but the overall sweetness is low. The more you chew, the richer the butter, the moderate saltiness, and the sweetness of the egg spread slowly.

When eaten as it is, the sweetness became slightly stronger, and when it was reheated, the aroma was felt more.

There is a sticky feeling when you break it

Luxurious bread that looks like a good combination of croissants and brioche. Although it has a rich and chewy taste, it has a light and fluffy mouthfeel and a moderate sweetness, so it is quite crispy. One is quite big, so be careful not to lick it all at once!
