That is "Ladies & Gentlemen" in Isetan, Shinjuku, which is a bit embarrassing for people like me to say the name of the store (laughs). The pancakes here are souffle-based, which was conceived by a famous pastry chef.


It's delicious, but no matter how you think about it, it's an omelet (laughs at the venue). Was it served by mistake? I really thought so at first.

It has a lot of eggs and milk, and it contains only a little powder. For Japanese people, when it comes to pancakes, powder is the main thing, isn't it? But here the opposite. The flour is only contained in the binder, making it a food that gives you the feeling of an egg.

Mr. Terashima: Is it sweet?

Tomiyama: This is it. It's hard to say whether it's salty or sweet ...

I can explain that a menu like Trader Vic's The Elvis just squeezes sweetness and saltiness in the mouth, but that's not the case. It's an indescribable taste.
