Yufu Terashima, who is familiar with "Pancake Note ", is an idol and a student of Tomiyama at Waseda University. Mr. Terashima seems to be an excellent student who has completed the grade of "A plus" in the lecture by Professor Tomiyama. What kind of story did you have?

■ What are the criteria for selecting a store in "Pancake Note"?

Mr. Tomiyama has been eating pancakes at a pace of 200 meals a year since around 2010. However, what was introduced in "Pancake Note" was 100 pancakes carefully selected from them. Where were the criteria for that choice?

Tomiyama: At the time of writing, the criteria for choosing a restaurant was that it was delicious, but it was also very important that the people at the restaurant weren't afraid.

There are quite a few popular stores that do not respond well to general customers. It's so popular that it's normal for customers to come, and I can't see the faces of each and every customer. I can't afford to see it ... The worst part is that I can't say where it is, but there was a store where newcomers were so terrified that customers could hear it all.

Mr. Terashima: Newcomer flirting? Are you a store clerk?

Tomiyama: That's right. I often go to pancake shops by myself, so I often go to the counter seats. Then you can see and hear everything in the kitchen.

I hear the store master scolding the clerk, like, "Do you have a brain miso?"

Mr. Terashima: Wow, I don't want to eat that person's pancakes!



Tomiyama: That's right. It's hard to eat while feeling sad when it's brought in front of you. The pancakes are delicious, but the information coming in from my ears is too tight.

"Are you thinking about it properly? Do you have a brain miso?"

I can hear words like this all the time. But, the scolded newcomer hasn't made a big mistake. The timing of putting out water and hand towels was a little late, so it's enough to say "properly", but is there a brain miso?

One of the characteristics of my book is that such shops are not listed even if they are delicious.

I think that a good restaurant is not only delicious, but also that the people at the restaurant were kind.

■ What stores did you discover after writing "Pancake Note"?

Tomiyama: In my case, eating pancakes is my hobby, so I continue to eat pancakes even after the book is published.

If this is a professional food writer, I would have to publish books one after another, and nowadays I would be trying hard to eat French toast every day, but in my case it's my hobby, so I'm still eating pancakes. I will.

So, today I would like to introduce the shops that I discovered after writing "Pancake Note".

Mr. Terashima: (Towards the audience) If this is the case, it may be okay because it's not crowded yet. Maybe now is the time to go. Because when it comes to books, they line up, right?

Tomiyama: I hate lining up.

Mr. Terashima: Do you ever get so hungry while lining up that you don't know what you were hungry for? That's a waste, isn't it?

Tomiyama: Yes! I also basically line up the survey alone. After all, the popular stores that are lined up are when you don't line up in groups of 4 to 5 people. It's no different from an amusement park.

Today, I recommend Terashima-san only to the shops where you don't have to wait in line. Also, I think it's easier for men to go because the shops with higher girls' power are removed.

Tomiyama: This is not a pancake, but a hot cake. Orthodox, good old Japanese "hot cake". 3 layers. The diameter is not that big.

Tomiyama: The inside of the store was calm, and I thought it was like Mr. Terashima. It's delicious, it's close by, and I think it's good.

◆ Deep and clever: Sapporo "Rokkatei"

Sapporo "Rokkatei" is famous for chocolate, so I think everyone knows that there are several coffee shops in Sapporo, where you can eat hot cakes like this.

Tomiyama: Isn't it kind of confusing? What's more, this is properly covered with cloche on a plate and carried.

Moisture is properly trapped in the cloche until just before. If you leave the freshly baked pancakes unattended, they will become dry, so you need to close the lid in some way until just before eating, but at Rokkatei, that is also considered properly. .. It feels like this plate.

Tomiyama: Yes, it looks like Rokkatei. That's right. A very good shop. That's why the explanation written on the menu is awkward again. It is "Shiroo style". The founder is commonly known as "Shiroo", and it seems that this name was given because it was a hot cake that he liked. Let's read the explanation of the menu for a moment.

I went to the Maruyama store, where you can buy souvenirs from Rokkatei on the first floor, and there is a coffee shop above where you can eat these things. When you go to Hokkaido, I definitely want you to eat it.

Tomiyama: It 's the restaurant "Trader Vic's" in the hotel called Hotel New Otani. You may think that the hurdles are a little high in the hotel, but the price is relatively low and you can easily go there.

There are shops all over the world called Trader Vic's, but I think that this menu called "The Elvis" is probably only available here at the New Otani shop.

By the way, New Otani's trader Vix manager "Larry" experienced the taste of breakfast when he lived in the United States as a child, that is, the "mama's taste" is sweet and salty like bacon. It seems that the taste was a combination of.

Mr. Terashima: Is it like "McGriddles"?

Tomiyama: Yeah, that's how it feels. The Elvis was made by remembering that I was eating such things at home. The manager, Larry, in a little Japanese,

So, I want people with a fairly sturdy stomach to eat this. Actually, I thought that Mr. Terashima, who doesn't have a thin diet, would be able to go with Perot.

The dough is chewy and delicious. So I definitely want you to eat it.

The interior of the store is like a jungle cruise in Disneyland. I don't know why it's likened to Disneyland, which I've only been to twice in my life (laughs), but it has that kind of atmosphere.

Mr. Terashima: Amazon?

Tomiyama: It's Amazon, Polynesian, or tropical. Even though it is a hotel, when you enter the entrance of the shop, a different space suddenly spreads out, and it is a slightly strange shop where such pancakes come out.
