Morimoto, a Japanese confectionery specialty store, has been established in Hokkaido for 70 years. The "Dorayaki Nouveau" was created from the skills of making many confections by making the most of the bounty of the land of Hokkaido cultivated over the years. Hokkaido azuki beans, which are so precious to the producers, have a variety of expressions, and the freshly harvested new azuki beans are characterized by their "fresh and fragrant taste.

Mr. Tsujino, an azuki bean farmer in the town of Meimuro in the Tokachi region of Hokkaido, produces the finest azuki beans. Mr. Tsujino's fields are vast, and although he has a small crew to tend them, they are so well looked after that there are no weeds to be seen. This makes for better quality azuki beans. The azuki beans harvested from Mr. Tsujino's lovingly tended fields are then received by Morimoto's wagashi chefs and made into dorayaki.
