Recipe for "No Knife Needed" Bean Sprouts Okonomiyaki Recipe

Ingredients

1 bag bean sprouts
1 egg
50g (1.76oz) potato starch
1 teaspoon granulated dashi
sauce, mayonnaise, bonito flakes, green laver, etc. as needed

Directions

Wash bean sprouts and put into a heatproof container, press firmly against the container by hand and fold to reduce the size of the sprouts.

Cover with plastic wrap and microwave at 500W for 3 minutes.

In a bowl, mix the egg, potato starch, granulated soup stock, and cooked bean sprouts.

Drain off any moisture from heating.

Pour the batter into an oiled frying pan and even out the thickness. Cover and cook for 1 minute 30 seconds on each side.

Remove to a plate and top with sauce, mayonnaise, bonito flakes, green laver, or other toppings as desired.

How does it taste?

Crunchy and juicy bean sprouts and sticky and elastic dough. The two different textures make for a fun and satisfying okonomiyaki.

No meat or seafood. However, the deliciousness of okonomiyaki is largely due to the impact of the sauce and mayo, and the flavor of the bonito flakes and green laver, so it has a surprisingly "proper okonomiyaki" feel. The umami of the granulated dashi broth is also effective, so there is no sense of dread. Chopsticks will go straight to your heart's content. Of course, if you have some leftover in the refrigerator, you can add pork or bacon.

You can make this dish with only a few ingredients, and since you use bean sprouts instead of shredded cabbage, you don't even need a knife. It's super easy to make and healthy, so it's a great nighttime snack!
