I bought "Sakura Souffle Pancake Mix" at KALDI Coffee Farm. The price is 615 yen (tax included).
This is a product that allows you to make pancakes like souffle without having to separate the egg whites. An aluminum-free pancake mix that uses a leavening agent that does not contain alum (potassium aluminum sulfate). I actually made it to see if it really has a "souffle texture" just by mixing the ingredients and baking.

How to make
1. Mix souffle pancake mix and cherry powder
2. Combine eggs, salad oil and water, add souffle pancake mix and mix.
3. Pour the dough into a lightly oiled frying pan and bake on low heat for 2-3 minutes.
4. When the edges of the surface have hardened, turn it over and bake for about 2 minutes until it becomes brown.
Tasting
Each baked pancake is about 1.5 to 2 cm thick. You can see from the appearance that it is more plump than the one made with ordinary mixed powder.

The mouthfeel that you care about is soft and a little chewy. It is not as fragile as the souffle that disappears quickly, but it is moist without any dryness.
