Here's what you need to prepare. (This recipe is based on a recipe from the Co-op Pal System.1/2 tofu (about 150g (5.29oz))
200 g pancake mix
120 ml milk
Enough to make 4 pancakes about 2 cm thick and 10 cm in diameter.
How to make
Put the tofu in a bowl and roughly break it up with a whisk. It is OK if the mixture becomes a smooth paste.Add milk and stir to combine.
Add the pancake mix and mix briefly.
Pour the batter into the pan with oil (not included in the quantity). Cook over low heat, turning over when the surface becomes fluffy.
When softly puffed and browned on both sides, remove to a plate and serve. Serve with jam, yogurt, or any other toppings you like!
