) Short pasta: 400g (14.11oz)
Salt and black pepper: to taste
Edamame (fresh or frozen): 300g (10.58oz)
Garlic (peeled and roughly chopped): 4 cloves
Basil, parsley, mint or other herbs: 1 1/2 cups * Use any combination you like
Sunflower or pumpkin seeds (preferably unsalted): 1 /3 cup
Olive oil: 1/2 cup
Lemon juice: 3-4 tablespoons
Nutritious yeast (or powdered cheese such as pecorino or parmesan): 3 tablespoons
Chili flakes (optional topping): to taste

Healthy pasta with edamame paste Directions

1. In a large pot, bring water and salt to a boil. Add edamame and cook for 3 to 4 minutes. Add edamame and boil for 3-4 minutes until soft. 2.

Remove the edamame and transfer to a colander. Rinse in cold water, drain and cool, then remove the beans from the pod. 3.

Add the pasta to the same pot of water (adding more water if necessary) and cook according to the indicated time. 4.

4. meanwhile, place edamame, garlic, herbs, and sunflower or pumpkin seeds in a food processor or blender and blend for 8-10 seconds. Gradually add olive oil and 2-3 tablespoons water and blend until a smooth paste is formed. It will taste better if a little texture remains.

5. add 3 tablespoons lemon juice, neutral yeast (or powdered cheese), 1 teaspoon salt, and a few shakes of black pepper. Taste and adjust with salt and lemon juice.

6. When pasta is cooked, drain pasta in a colander, reserving 2 cups of cooking water. Place a saucepan over medium heat, add the edamame paste from step 5 and 1 cup of the pasta cooking water. Mix well until the paste and water emulsify, then add the cooked pasta and stir to combine. If there is not enough water, add the pasta cooking water until the sauce is loose. 7.

When ready to serve, drizzle with olive oil, squeeze lemon juice, and sprinkle with red pepper flakes and torn herbs!
