Kinzanji Miso Mayo Chicken Burger

Mossberg Shizuoka Local Menu

The "Kinzanji Miso Mayo Chicken Burger" was co-developed with the Shizuoka Daiichi Television program "Marugoto" and uses "Kinzanji Miso", a hidden specialty of Shizuoka.

According to Mos Burger, Kinzanji Miso is a kind of "okazu miso" or "namemiso", a type of miso that is popular as a local dish in Shizuoka, Wakayama, Chiba and other prefectures, and is eaten on its own as an accompaniment to rice or sake. In Shizuoka Prefecture, where tea is grown, it is said to have been eaten with rice balls during the busy tea picking season.

Kinzanji miso, made by Kanetsu Shokuhin, a company that has been making miso in Shizuoka Prefecture for 300 years, is used. Wheat and soybeans are kojied in their grains, fermented and matured in the traditional way, and finished without chemical seasonings to give it a mild taste.

The juicy Teriyaki chicken, made from a single piece of chicken thigh, is topped with the original Kinzanji sauce, a flavorful combination of Teriyaki chicken sauce, Kinzanji miso and mayonnaise-type sauce, browned over an open flame, and sandwiched between buns with green leaves and finely sliced green onions for accent. Green leaves and accents of shredded green onions are sandwiched between buns. The price is 430 yen (tax included, same as below).

The "Moss Rice Burger Kinzanji Miso Mayo Chicken" is a rice plate with rice instead of a bun, and the ingredients are placed on top. Kinzanji miso, also known as "okazu miso," was used to accompany rice, so the juicy teriyaki chicken with Kinzanji sauce, grilled over an open flame, is said to be a good match for rice. The price is 460 yen.
