Castella, which has been a signboard since the founding of Bunmeido, is baked one by one by craftsmen using traditional techniques that have been handed down for over 100 years without using additives, and the taste and quality are preserved. Blue Bottle Coffee sympathized with the nostalgic and happy taste, commitment to raw materials and manufacturing, and the attitude of Bunmeido, which is constantly taking on challenges, and this collaboration was realized.

"Blue Bottle Coffee Castella" is an original castella that uses "kibi sugar", which is often used in blue bottle coffee pastries, based on the traditional castella that uses eggs, sugar, starch syrup, and flour as raw materials. It is a dish that has a gentle sweetness that goes well with coffee.



You can enjoy the extraordinary richness with a large amount of egg yolk, the smooth texture with fine-grained flour, and the texture of the large grain laid on the bottom.
