Marugame Seimen's classic "Kake Udon" is topped with two red headed shrimp tempura. It is said that the chewy "white" udon noodles made in the store and the bright "red" of the headed shrimp express the auspicious "red and white". Umefu and wakame seaweed are used to create a New Year's atmosphere.
