I tried Marugame Seimen's "Uma Spicy Meat Kamatama". It is a dish of minced beef with moderate spiciness and sweetness that is firmly entwined in noodles with thick eggs.
The price is 650 yen for the (normal) size (tax included, same below), 760 yen for the (large) size, and 870 yen for the (profit) size.
Minced beef is mixed with gochujang and garlic to give it a spicy and delicious taste. Mixing raw eggs adds mellowness and richness. It is perfect for eating with the hot and chewy Marugame udon that has been scooped up from the kettle.
As for toppings, not only ginger and chopped green onions, but also "fried balls" are surprisingly suitable.
Minced beef is colored red and seems to be very spicy, but when you scoop it with a ranger etc. and taste it, it stimulates your tongue moderately. It also has a gentle sweetness, so you can eat it without having to prepare too much.
When mixed with eggs, it gets entangled in udon noodles, and you can enjoy the umami and spiciness of the meat, the sweetness, and the mellowness of the yolk in the noodles. When chopped green onions are squeezed together, the crispy texture is accented, and ginger gives a slightly refreshing flavor.
Also, the crispy texture of the fried balls can be enjoyed very much when chewed with minced beef. All of Marugame's free toppings go well with each other, so we recommend that you fill them up.
