Uses "Sanriku Miyako salt" made by boiling seawater pumped from the Omoe Peninsula in Miyako City, Iwate Prefecture. During the salting process, the sweetness of the salmon is brought out because it slowly soaks into the salmon. Adjust the amount of salt to maximize the taste of the ingredients.
