Mochi and pancake mix "Mochi Mochi Donuts" easy without deep frying

Using pancake mix and cut rice cake to make "Mochi Mochi Donuts" baked in the oven. Plump, chewy, and very satisfying!

Material ( For 4 persons )
pancake mix 165g (5.82oz)
Milk or soy milk 120ml (4.06us fl oz)
butter 20g (0.71oz)
rice cakes cut into rectangles (usu. eaten on New Year's Da) 170g (6oz)
Molasses, soybean flour, etc. to taste proper quantity

Pon de Ring" at Misdo and mochi mochi ring doughnuts at convenience stores are delicious, aren't they? We have tried to recreate the same deliciousness using pancake mix and rice cakes! They are easy to prepare because they are not fried in oil.

Pon de Ring-style "Mochi Mochi Doughnuts" recipe

Pancake mix 165g (5.82oz)
Milk or soy milk 120ml (4.06us fl oz)
Butter 20g (0.71oz)
Kirimochi 170g (6oz) (about 3 pieces)
Molasses, soybean flour, etc. to taste As desired *for topping

Directions

Pour milk or soy milk into a heat-proof bowl. Cut kirimochi into 1 cm cubes, add to bowl, cover with plastic wrap and microwave for 4 minutes.

Cut a rice cake into 1 cm cubes.

Place in a bowl with milk or soy milk and microwave.

When the rice cake becomes soft, take it out and knead well with a rice scoop.


Add melted butter to the bowl and knead further.


Add the pancake mix little by little and mix. When the mixture is no longer powdery, divide into 4 equal portions.

Divide each of the 4 equal portions of dough into 6 more equal portions and roll them into a circle about the size of a 500 yen coin. Arrange them in a circular pattern on a cookie sheet and bake in a preheated oven at 200°C for 13 minutes.


When baked, place on a plate and sprinkle with your favorite toppings, such as molasses or soybean flour, to complete the dish!
