Easy "Cold Corn Potage" recipe using microwave oven.

Recipe Cold Corn Pot
age Even on days when you don't have much of an appetite! Here is a simple recipe for "Cold Corn Potage". The deliciousness of corn is preserved in this potage!Ingredients (Serves 2)
1 corn cob1/4 onion
3/4 cup chicken broth
1/2 cup milk
about 1 teaspoon salt
1 teaspoon salad oil
pepper to taste
* Chicken broth can also be made with chicken consommé, etc.
Directions
Wash peeled corn. Sprinkle with water, sprinkle lightly with salt, and wrap in a double layer of plastic wrap. Microwave (600W) for 2 minutes, steam for 1 minute, turn upside down and cook for 1 minute more.Remove from heat while still wrapped in plastic wrap and cut into quarters. After removing the plastic wrap, remove the corn kernels. At this point, reserve about 1 tablespoon for garnish.
Add the onion, cut lengthwise, and the salad oil to the pan. Sprinkle with another 1/2 teaspoon of salt and saute over low-medium heat.
Add the chicken broth, corn, and pepper to the pot, cover, and simmer over low heat for 10 minutes. Transfer to a blender, add milk, and stir.
Transfer to a metal bowl and cool in cold water in a separate bowl, stirring with a rubber spatula. Scrape the potage through a colander to make it smoother.
Remove from heat and refrigerate for 1 hour.
When some of the heat is removed (the key is not to chill it too much), garnish with the corn kernels that you have removed!
