Spicy Hot Salad Udon Noodles
The "Spicy Hot Udon Salad" is a combination of freshly cooked cold udon noodles, crunchy salad, and a special spicy homemade "tantan-miso" (bean paste). The udon noodles are made from carefully selected Japanese wheat flour, and after boiling, the noodles are thoroughly moistened with water to give them a smooth, silky texture. The tantan-miso (Chinese-style meat paste) is made with plenty of the delicious flavor of pei-zheng bean paste, an essential ingredient in Chinese cuisine, and is further enhanced with the aromatic flavor of hwasho (Chinese pepper).
The "thick sesame sauce bukkake dashi," a combination of flavorful white dashi and soy sauce-based kaeshi, is also a perfect match for the udon. The mild flavor of sesame seeds with just the right amount of sweetness is followed by the sharpness of the secret ingredient, mustard paste, which creates a refreshing aftertaste. The spiciness and aroma of the spiced raayu (Chinese red chili oil) is also very appetizing.
It will be available from May 16 to mid-July. Prices are: regular 690 yen, large 830 yen, and special 970 yen, all including tax.
The "Sesame Sauce Salad Udon" combines freshly cooked, cold udon noodles with a crunchy salad and a rich, special sesame dressing. Fresh raw vegetables such as textured leaf lettuce, mizuna (potherb mustard), and sweet and colorful bell peppers are blended with careful attention to size and cutting method.
The sesame dressing is tailored to reduce the acidity characteristic of dressings, while providing the sweetness, flavor, and mellow deliciousness of sesame seeds. The dressing is thickened so that it mixes well with udon noodles. This allows the udon noodles, bukkake-dashi, and sesame dressing to enjoy a unified taste when combined.
It will be on sale from May 16 to early December. The price is 540 yen for regular, 680 yen for large, and 820 yen for large, all including tax.
