A monthly fair "Seasonal Hitosara - February" will be held at Cocos. The main dish is "Twice Delicious!" starring fresh yuba made from 100% Japanese soybeans, which is made one by one by artisans. Pasta with Raw Yuba and Seared Cod Roe in Dashi broth" and "Cocotte Kaisen Hot Pot with Raw Yuba and Oysters from Hiroshima Prefecture in Kyoto-style Dashi broth" will be served.

uba Leaves and Seared Cod Roe in Dashi broth "Twice Delicious! The "Pasta with Nama-yuba and Seared Codfish in Dashi broth" combines the gentle taste of nama-yuba (fresh yuba leaves), delicious seared codfish and clams with warm dashi broth to create a dish that can be enjoyed twice.

The creamy yuba melts in your mouth when you put the raw yuba in the Japanese-style sauce. The pasta is served in a soy sauce-based pasta sauce with fragrant grilled green onions and fried garlic for a rich flavor. The rich flavor of the pasta, including the seared cod roe, changes to a milder taste when the dashi broth is poured over the pasta halfway through the dish. The dashi broth can be tasted in a variety of flavors, including refreshing with wasabi (served separately) or savory with ground sesame seeds. To go is not available.

Kaisen nabe with fresh yuba and Hiroshima oysters in

broth "Kaisen nabe with fresh yuba and Hiroshima oysters in Kyoto-style broth" is a plate that includes a kaisen nabe (seafood hot pot) combining tender and thick fresh yuba, four kinds of seafood and Kyoto-style broth, a seasonal small bowl and rice. The four kinds of seafood (Hiroshima oysters, cod, scallop, and shrimp) are placed in a cocotte and cooked in the oven to bring out their plump texture and juicy flavor.

The Kyoto-style dashi broth, refreshingly fragrant with chopped yuzu (Japanese citron), was tailored to go well with the fresh yuba and seafood. You can enjoy the flavor of the seafood and the gentle taste of the dashi broth together with the fresh yuba. Add wasabi (Japanese horseradish) to taste for a different flavor.
