Oretachi no Pork
Jiru Udon: In order to create the best pork miso soup to go with udon noodles, we started with miso and carefully selected and blended dozens of varieties of miso. The miso was carefully selected from dozens of varieties and blended to bring out its sweetness, richness, sharpness, and umami flavor. The white dashi broth is made from Hokkaido kelp and carefully selected shavings, giving it a rich, full-bodied flavor with a hint of dashi.
Ginger and garlic are used to add aroma, and the sweet and spicy flavor of gochujang (red pepper paste) and oyster sauce are added as secret flavors. The addition of potato paste allows the special miso broth to be thoroughly mixed with the freshly boiled noodles.
Ingredients include pork, cabbage, onion, carrot, burdock root, and deep-fried tofu. The flavor of the ingredients and the sweetness of the vegetables are enhanced by simmering them in the special miso broth. White pepper is used to accentuate the flavor.
To ensure that the noodles are well mixed with the special miso broth, they are scooped directly from the boiling pot and served with freshly boiled "kama-nuki" noodles. You can taste the flavor, richness, and aroma of the special miso broth as well as the sticky texture of the udon noodles, which are freshly made by artisans from 100% domestic wheat, salt, and water. For take-out, the noodles are watered down and heated before serving.
The price including tax is 790 yen for (ordinary), 920 yen for (large), and 1,050 yen for (special). Take-out items are only available in (ordinary) and (large) sizes. A separate charge of 30 yen per cup will be added to each to-go order to cover the cost of the container.

LimitedToppings "Oretachi no Pork Jiru Udon" is available with a limited number of toppings. Oretachi no Nirabata Pork Jiru Udon" is a combination of chopped fresh chives and butter. The texture and flavor of the chopped fresh chives and the richness and aroma of the butter that melts on the hot special miso broth make this an addictive dish. Toppings of only butter or chopped raw chives are also available.
Our Nirabata Pork Soup Udon" is priced at (regular) 890 yen, (large) 1,020 yen, and (special) 1,150 yen, including tax. Butter topping and chopped fresh chives topping are 70 yen each. No takeout.
Free condiments are available to change the taste, and we especially recommend "ground sesame" and "grated ginger". They go especially well with vegetable tempura such as kabocha tempura. For a mellower taste, we recommend "Onsen Tamago (egg)".
