Grilled Eggplant with Yogurt Sauce
Ingredients (2 servings)
2 eggplants1 tablespoon olive oil
1/2 tablespoon mayonnaise
2 tablespoons plain yogurt
1/2 teaspoon grated garlic and lemon juice
salt and black pepper to taste
Grilled eggplant with yogurt sauce Directions
Mix mayonnaise, plain yogurt, grated garlic and lemon juice in a container to make sauce.Wash the eggplant, remove the stem, and slice into 1 cm thick slices.
Heat olive oil in a frying pan and brown the eggplant on both sides.
When done, transfer to a plate to cool. When cooled, pour the yogurt sauce over the eggplant and sprinkle lightly with salt and black pepper.
