Domestic sweet summer juices are combined with white bean paste to create a flavor that is said to be well suited to the summer season. The outer skin of amanatsu is also added to accentuate the bitterness peculiar to amanatsu. The topping of sweet summer orange is said to add more depth to the flavor of the ingredients.

Like the standard "Meidai Kanzubaku" with tsubu-an (sweet red bean paste), the red bean paste is wrapped in a thin wheat crust and baked into a flat round shape. It is based on the traditional technique of baking at a stall at the foot of the Nihonbashi bridge in the Edo period, and is made in the shape of the tsuba of a sword, which is the origin of its name. Each piece measures 120 x 85 x 55 mm and weighs 55 g.
