Ingredients (Serves 2)
1/2 tofu1 egg
100 g mixed beans
2 teaspoons sesame oil
1/2 tablespoon soy sauce, sugar and mirin
1/2 teaspoon Chinese soup stock

Wrap tofu in kitchen paper, place in a colander, and drain on a weight for 2 hours. For a quicker cooking, heat the tofu in a heatproof container in a microwave oven at 500W for 2 minutes to drain.Heat sesame oil in a frying pan over medium heat, tear tofu into bite-size pieces. Fry for 3-4 minutes until browned.
Add mixed beans, soy sauce, sugar, mirin, and Chinese soup stock, and stir-fry until all liquid is absorbed.
Turn the beaten egg and fry, stirring constantly. When eggs are set, remove to a plate. Sprinkle with coarsely ground black pepper to taste.
