Goya Chanpuru, a typical Okinawan local dish, is available for a limited time only. It is a combination of seasonal bitter melon, pork, and tofu stir-fried in a dashi broth sauce.

The bitter melon is sliced thinly to enjoy its texture and soften its bitterness. The pork is made from ude meat, which is rich in flavor and has a concentrated, robust taste. It is characterized by a mouth-watering presence that is as good as the texture of the bitter melon.
