Tsumire made from minced saury, a specialty of Onagawa Town, Miyagi Prefecture, which boasts one of the best landings in Japan, is finished in a Japanese-style soup that uses chin (flying fish) dashi and saury fish sauce. The ingredients include nameko mushrooms with a nice texture, fragrant roasted green onions, and tofu that follows the method of making surimi soup from Onagawa Town. The tororo is accented with the scent of yuzu topping.
