"Blue indigo" is a new type of blue ginjo sake that is very rare in the long history of sake. It is made by adding a blue natural herb called butterfly pea to authentic ginjo sake. Uses Yamada Nishiki from Shiga Nagahama. A mellow and fruity ginjo sake with a rice polishing rate of 60%.
