Ingredients
2 cucumbers1 tablespoon grated ginger (or tube)
2 teaspoons sesame oil
1 teaspoon mirin (sweet cooking sake)
1 tablespoon sake
1 teaspoon chicken stock
1/4 teaspoon salt
Directions
Cut cucumber into 3-4 cm lengths and divide each lengthwise into 4 pieces.Heat sesame oil in a frying pan, lightly fry ginger, then add cucumber and fry further.
When the surface of the cucumber becomes slightly transparent, add mirin, sake, and chicken broth stock. Stir to blend, and when all the moisture is gone, the dish is ready to serve.
