"GALETTE STAND", a shop that offers "genuine galettes" using Shinshu-produced buckwheat flour, opened in Ebisu, Tokyo on July 30th.

Garrett's shop is like Paris, France ...! Coupled with the fashionable locality of Ebisu, I felt like I could feel Parisienne while I was in Japan, so I went to eat at lunch time!

The Galette Stand is just beyond the big intersection, about 5 minutes walk along the main street from the east exit of Ebisu station. Look for the yellow sign that looks like the sun.

"Complet" is absolutely delicious, with a soft-boiled egg, melted cheese, and ham! Galette that combines various ingredients. Put a knife in the yolk and let it melt.

The galette is crispy and has the impression that it is cooked more firmly than the crepe dough that is eaten as a sweet. You can feel the aroma of soba with a crispy and light texture!

The galette is lightly baked, but the scent of buckwheat gives off an extraordinary presence, and I insist that it is not just a rug. The fragrant galette dough goes perfectly with the rich cheese! With the support of melting eggs and ham, it is a simple yet insanely luxurious dish.

On the other hand, "sausage" is a menu that combines buckwheat galette with eggs, cheese, tomatoes, and sausages. This egg is baked harder than the complet.

The sweetness and sourness of juicy tomatoes are added to the iron plate combo of galette and cheese for a refreshing and enjoyable taste. Thanks to the sausage, the taste is improved and it is a dish with a stronger "feeling of eating".

I had imagined that the galette dough had a more moist and soft texture, but it was more chewy than I had expected, and it matched perfectly with the rice-based ingredients. And I was surprised that the soba and cheese go so well together!

This time I was full with the lunch set, but next time I would like to try the sweets menu. I wonder how the aroma of soba will change ... I'm curious!
